Wormwood and Thujone
Essential to any absinth is the use of wormwood in production to ensure a maximum thujone content. Thujone is a compound in the wormwood plant and its presence is what makes absinth, “absinth”. Many brands of so-called “absinth” lack any traces of thujone, or contain the minutest trace amounts, we know this because we have had them tested. Each batch of our Absinth and Bitter is tested by mass spectrometry to determine the exact thujone levels. We take this extra step for two reasons, first to ensure that we comply to European Union Law, second to ensure the total satisfaction of our discriminating customers.
