Absinth fountains are an important component of the social experience of absinth drinking. The fountains evolved from the practice of pouring water over sugar cubes
placed on a slotted spoon. As the water ran over the sugar, it dissolved and both passed through the slots in the spoon to mix with the absinth in the glass. Since absinth has a high alcohol concentration and tends to be bitter from wormwood, diluting it with sugar water turned a powerful bitter drink into a more consumable beverage. And many people agreed. Many historic pictures of absinth drinkers show a water carafe on the table along with the absinth glass.
